This unique flash roasting system creates artesian flame roasted ham or fire roasted pork joints. Unitherm's Tunnel of Fire is a flash roasting system that is literally a tunnel of fire. This system "individually quick flames" (IQF) the product to maximize the effects of flame searing and minimize yield loss. Multiple ring shaped ribbon burners flame sears the top, bottom, and all sides of larger profile products.
