Until now the malaxing process has been based on the time and the temperature, without taking into consideration that these factors, both could badly affect the final result. Nowadays a new malaxing process is available, thanks to the exchanger, that ensures the ideal temperature and reduces enormously the malaxing time. Our models Sintesi and Cultivar are arranged to be equipped with the Leader Linear System, that allows working both continuously and by stop-and-go. By working with stop-and-go phases, the paste remains in the decanter 20 minutes, what is a very short time where any problem coming from the malaxing process is avoided.
